Stewed pigeon peas is easy, quick and can be served in under 30 minutes. This meal is fiber and protein filled.

Stewed Pigeon Peas
As a Bahamian I grew up on pigeon peas in Bahamian Peas Soup and Dumplings, BAHAMIAN PEAS & GRITS, and Bahamian Peas and Rice. My dad being the master chef that he was would stay in the kitchen cooking large pots full of Bahamian food for family and friends that visited.
Having been given the challenge to create other pigeon peas recipes I thought to try something different each week.

Stew Pigeon Peas
Ingredients Needed
Pigeon peas, cooked
Coconut milk
Onion
Tomatoes, chopped
Thyme leaves
Italian seasoning
Maple syrup
Garlic
Ingredients
- 1 pound bag pigeon peas, cooked
- 1 14 oz tin coconut milk
- 3/4 cup chopped onion
- 2 medium tomatoes, chopped
- 1 teaspoon thyme leaves
- 1 tsp Italian seasoning
- 1 tablespoon maple syrup
- 2 cloves garlic, crushed
- salt and pepper to taste
- DUMPLINGS
- 1 cup all purpose flour
- 1/2 tsp baking powder
- 1 tbsp cornmeal
- 1 tsp sugar
- 1 tsp salt
- enough water to make a stiff paste
Instructions
- In a medium size pot add the peas, coconut milk, diced onions, thyme, Italian seasoning, and bring it to a boil.
- Allow the beans to cooked down to a simmer.
- Add a slurry made of 1 tablespoon of cornstarch and 1/2 cup water, and pour in.
- Add salt and pepper to taste.
- Serve over plain rice, quinoa or by itself.

Shut the front door. This is delicious. I used regular pigeon peas in the can, rinsed it off real good. Added a few piece of soy beef chunks and used bell peppers instead of tomatoes. The dumpling took it to another level. Unbelievablly delicious.
