Bahamian Peas and Grits is an authentically Bahamian dish that is comfort food at its best. I grew up on Peas and Grits, my father would make for us. It is such a staple part of the Bahamian diet that they eat grits most mornings as a part of their breakfast. This grain is made from yellow or white corn.
This coarse grain takes about 30 minutes for cooking. Once the grits is added to the boiling water, lower the heat and cook on low.

Ingredients
- 1 cup grits
- 3 cups water
- 1/2 cup coconut milk
- 1 1/2 cups pigeon peas
- 1 small onion, diced
- 1 tablespoon tomato paste
- 1 tsp thyme leaves
- salt to taste
Instructions
- Dice onions
- Place diced onions and tomato paste, along with thyme leaves in a large pot.
- Allow the onions and paste to cook down until the paste is dark, about 5 minutes.
- Add water and coconut milk.
- Allow the liquid to come to a boil, then add the grits once the liquid is boiling.
- Stir as soon as the grits is in the pot, making sure that no lumps are in the pot.
- Lower the fire to a simmer and cover.
- Check the grits about 10 minutes into the cooking time, stir.
- Cover and it should be ready in 20 minutes.
