Ingredients

  

  • 2 cups Brown Rice
  • 1 cup Onion chopped
  • 1/2 cup Sweet pepper chopped
  • 1 tbsp. Tomato paste
  • 1 tsp. Sea salt
  • 2 tsp Thyme leaves
  • 3 cups Water
  • 1 cup coconut milk
  • 1 cup pigeon peas or any peas cooked
  • 1 tbsp. Olive oil
  • 2 tsp. Braggs Liquid Amino

Instructions

 

  • In a medium size pot or a rice cooker, put chopped onions, bell peppers, thyme leaves, olive oil, tomato paste and allow them to cook until the onions are tender or about 5-7 minutes.
  • Add water, coconut milk and rice.
  • Allow the water to come to a boil for 10 minutes before lowering the heat.
  • Cover and reduce heat to low.
  • Cook about 45 minutes.
  • Remove thyme sprigs
