PEAS SOUP & DUMPLINGS

Ingredients

  • 1 cup onion, chopped
  • 1 stalk celery, chopped
  • 2 tbsp tomato paste
  • 1 cup carrot. chopped
  • 2 cups potato, chopped
  • 1 cup cassava, chopped
  • 8 cups water
  • 1 cup Coconut milk
  • 2-3 cups Pigeon Peas
  • 1 cup tomato sauce
  • 1 tbsp sugar or maple syrup
  • salt and pepper to taste

Dumpling Recipe

  • 1 cup Whole Wheat flour or Spelt
  • 1 cup white unbleached flour
  • 1 tsp Baking Powder, Aluminum free
  • 1 tsp salt
  • 1 Tablespoon sugar
  • water as needed

Mix all the dry ingredients together.

    Add enough water to make a stiff dough.

      Once the soup is boiling, add the dumplings in spoonful.

        Coconut Milk Recipe

        • 2 cups coconut. chopped
        • 3 cups water

        Blend the coconut and water until smooth.

          Use a cheesecloth or strainer to separate the milk from the left over pulp.

            The pulp can be added to cakes, cookies and much more.

              Instructions

              1. In a large pot add onions, celery, garlic, bay leaves, thyme, and a 1/2 cup of water. Once these are translucent add the tomato paste.a bowl of flour and sugar with salt for dumplings a bowl of carrots, tomato sauce, onion, corn pigeon peas or gungo peas sweet potato cassava
              2. Allow the tomato paste to cook for about 10 minutes before adding the other ingredients.
              3. Add the vegetables that take the longest to cook first. Place vegetables in the pot.
              4. Pour in water, and coconut milk and allow the vegetables to cook.
              5. Add tomato sauce and Italian seasoning.
              6. Add dumplings when the soup is boiling.
              7. Allow it to cook and boil for another 10 minutes. Add salt and cayenne to taste.
              8. Make a mixture of 1/2 cup of flour and 1 cup of water, stir until smooth and pour into the boiling soup. Stir and allow to simmer on low for 5 minutes. Serve!
