Ingredients
- 2 cups flour (1/2 white. 1/2 whole wheat)
- 1/2 cup cane sugar, your choice of sweetener
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon sea salt
- 6 tablespoons plant-based butter or coconut oil (must be frozen)
- 1 cup chopped fresh strawberries
- 2/3 cup cold plant-based milk, plus a little more if needed
- 1 tsp vanilla
- 1/2 tsp lemon juice
- 1 tsp lemon zest, opt
Instructions
- Pre-heat the oven to 350ºF.
- Measure out all the dry ingredients into a medium size mixing bowl, flour, sugar, baking powder, and salt.
- Add the lemon zest.
- Add the butter, cut into small pieces.
- Rub the margarine into the flour until the mixture resembles breadcrumbs.
- Add milk a little at a time in the center of the mixture, working from the outside in until a firm dough is formed.
- Add the lemon juice and vanilla to the diced strawberries.
- Fold them into the flour mixture. If it is a little wet, sprinkle flour.
- Pour mixture out onto a clean dry surface.
- Using parchment paper roll the dough out between the pieces of parchment paper.
- Transfer the scones onto the lined baking sheet.
- Bake at 350ºF. for 20 minutes or until golden brown.
