This Lemon Lime Pound Cake is moist, light, most definitely gorgeous and delicious. It is the perfect way to introduce spring when it comes or a beautiful summer day. Here in sunny Nassau where I live, it is always summer.
If you are anything like me, you wish every meal can end on a sweet note.
This cake reminded me of my niece Nara’s Lemon Lime cake that she made for us just before she left for college. Missing her I was inspired to bake it and believe me it was devoured totally. One niece, Cha Cha, said it tasted just like it looked, delish!

Ingredients in the Lemon Lime Pound Cake
Whole Grain Flour
Whole grain flour is high in fiber, vitamins and minerals. The benefits of using foods high in fiber include, less heart disease, obesity, diabetes and better gut health.
White Unbleached Flour
Unbleached flour means that the flour is not processed with aluminum, and can minimize your intake of potentially harmful material.
Cane Sugar
Cane sugar is rich in minerals and nutrients, like calcium, iron, potassium and antioxidants.
Baking Powder
The baking powder used in this cake and on this website is aluminum free and potentially healthier than those that are not. It will add to the lightness of the cake.
Salt
Without even a small amount of salt, the flavor will not come together. Slat brings out the sweetness.
Coconut Milk
This milk has been my weapon of choice in baking because it helps cakes and breads to be more moist than other milks.
Coconut Oil
The coconut oil has a rich flavor that permeates throughout the cake. It will add moistness to the cake and help to prevent the cake from drying out.
Lemon Rind
Lemon rind is going to add much health benefits to this rich, moist cake, It has fiber, vitamins, antioxidants which can help the immune system.
Lime Rind
Lime rind, like any citrus rind has flavonoids, polyphenols and dietary fiber that helps with bowel movements. It also has vitamin C and antioxidants which helps to build the immune system, warding of the common cold and flu.

Ingredients
- 1 1/2 cups Whole wheat flour
- 1 1/2 cups White Unbleached Flour
- 2 tbsp. aluminum free baking powder
- 1 tsp. Salt
- 1 3/4 cup cane sugar, natural or date paste
- 1/2 cup Coconut milk
- 1 tbsp. Vanilla
- 1 tbsp. Lemon rind, grated
- 1 tbsp. Lime rind, grated
- 2/3 cup oil
- 1 1/2 cup Water
- TOPPING
- 2 cups Icing Sugar
- 1-2 tbsp Milk
- 2 tbsp Plant-based Butter
- 1 tbsp Lemon juice
- Water as needed
Instructions
- Measure all dry ingredients and place them in a medium size bowl. Using a wire whisk combine the dry ingredients.
- Measure the liquid ingredients and pour them into the flour.
- Mix well using a wire whisk or a cake mixer.
- Pour into a pre-sprayed pan and bake at 350º F for 45 minutes to an hour.
- ICING
- Take the icing sugar and sift it to get out the lumps.
- Add the melted butter and milk.
- Cream the ingredients
- together.
- Once the cake is cooled, drizzle on the icing.
Notes
How To Be Sure A Moist Cake
- Make sure to add the dry ingredients to the bowl first.
- Use coconut milk and not any plant-based milks
- Make sure the oven is at the right temperature.
- Place the cake in the center of the oven and make sure it sits on the bottom shelf for about 20 minutes to develop a crust.
