Pistachio Carob Bars
Anyone that knows me will tell you that I LOVEEEE Carob, it is absolutely my favorite food. John at Patmos ate carob, which many believe to have been an insect, as the word uses the term Locust. But John while in exile, ‘on Lockdown on Patmos’, ate carob bean, fresh of the tree. I often say that I am on ‘lock down in Paradise’. My story is on YouTube. What do I eat on ‘lockdown in paradise?’ Carob. I always say, ‘my God has such a sense of humor.’
To have a treat that does not need baking and can be eaten in under an hour is such a delight. Anything Carob is my favorite dessert.

Benefits of the Pistachio Nut
The pistachio is low in fat, high in protein and therefore very good for persons who are plant-based or vegetarian. The nuts are high in fiber and can assist persons who are constipated, but can also help to prevent constipation also. High fiber foods are known to help with gut health and hence helps the stomach brain axis, all of which helps a person to feel better. High fiber foods also help with fighting some types of cancer, like breast and colon cancer. It is good for heart health, and the eyes.
Ingredients
- 1 cup Pistachio or nut of your choice
- 2 T Maple syrup or date paste
- 1/2 tsp coriander
- 1/2 tsp cardamon
- 1 tsp vanilla
- 1 T Flax meal
- 1/3 cup carob chips
- 1T coconut oil
- For: 4
- Preparation: 19 min
- Cooking: 30 min
- Ready in: 49 min
Instructions
- Shell pistachio.
- Take nuts and other ingredients, flax, vanilla, coriander, cardamon, sweetener and salt if nuts are unsalted, mix well together.
- Set aside.
- Take the carob and coconut oil and melt out the carob in a double boiler.
- Once it has melted, spoon the carob into the molds at the bottom. Leave about 2 tea spoons for the top.
- Press the nut batter into the carob.
- Place the molds and the bars into the freezer for about 20 minutes or until the bars
- have hardened.
- Enjoy!
