This APPLE FRUIT BAR can serve as a breakfast on the go, snack, or even a dessert. It is a heathy way to start the day. Served with a bowl of fruit, it can be a complete meal.
Ingredients
- FILLING
- 10 Apples, peeled and sliced
- 2 cup apple juice or water
- 1 1/2 tbsp. Cornstarch
- 1 tsp. Coriander
- 1 tsp cinnamon
- 1 cup raisins
- TOPPING
- 2 cups Oats
- 1 cup Shredded coconut
- 2 tsp. Vanilla
- 1 cup Walnuts, chopped (pecans)
- 1/2 cup Date Paste or Sugar
- 1/2 cup Water (if using sugar)
- 1/2 cup Unbleached White Flour
- 1/2 cup plant-based butter
- 1 tsp Cinnamon or coriander
Instructions
- Preheat oven to 350
- Combine the juice and sliced apples in the pot. Cook 15-20 minutes on low heat. Add the cornstarch and water combined. Set aside.
- After mixing the topping, press half of the mix into the pan. Pour the apple filling in a pie pan. Sprinkle on topping. Bake at 350º F for 30 minutes or until it is golden brown.
- Serve with your favorite vegan ice cream.
