Ingredients
- 1 whole cauliflower
- 1 cup onion, chopped
- 1/2 cup celery, diced
- 1/2 cup Bell Peppers, julienne
- 3-4 cloves Garlic
- 1 tbsp Sesame seeds (toasted)
- 2 cups frozen mixed vegetables
- 1 cup carrots, shredded
- 1 tsp Cumin
- 2 tsp turmeric powder
- 3 tbsp water (or Olive oil)
- 1 tsp fresh grated ginger (opt.)
- salt to taste
- For: 8
- Preparation: 15 min
- Cooking: 15 min
- Ready in: 30 min
Instructions
- Prepare cauliflower. Cut the cauliflower into florets and add to the food processor. Once the cauliflower is in the food processor pulse until it resembles rice. Set it aside until you are ready for it.
- Prepare the herbs, celery, onions, garlic, and bell peppers dicing what needs to be diced, and add them to the skillet.
- Toast sesame seeds for about 3-4 minutes on the stovetop in a dry skillet before cooking vegetables,
- Grate the carrots, or use the peeler and make strips.
- Add these herbs and carrots to a hot skillet with 3 tablespoons of water.
- Cook the vegetables down for about 3 minutes or until the carrots are completely cooked.
- Add the cumin turmeric and garlic powder. Cook for about a minute more.
- Add the cauliflower rice and cook for about 3 more minutes.
- Remove from the heat and serve.

How long will the Cauliflower Rice last in the refrigerator?
Cauliflower rice can last about 4 days in the refrigerator. Ensure that it is in a sealed container so it remains fresh.

I have to eat more of this instead of the real rice since my blood sugar is up a bit and could be managed by diet. Thanks for sharing.
