This Pumpkin Spice Bread is moist, light, very tasty and delicious. The pumpkin was a fresh picked fruit, right of the vine. It is an amazingly quick baked bread and I know that you are just going to love it.
It was Hippocrates who coined the saying ‘let food be your medicine and medicine be your food.’ Pumpkin is a food that can be used as medicine. It is antidiabetic, antitumor, antibacterial, anti-inflammatory, anti-hypertensive, and antiparasitic. Pumpkin helps to maintain a good cholesterol level, relieves pain and antioxidants.
Ingredients
Flour
Pumpkin puree
Sugar or Maple Syrup
Dates
Coconut milk
Coconut oil
Baking Powder
Cinnamon
Cardamon
Coriander
Flax meal
Ginger
Salt
While visiting the island of Eleuthera, Bahamas I had the amazing opportunity to visit a beautiful farm. We were invited to come and select all the ingredients for the Plant-based Cooking Class the next day. There was fresh pumpkin, native sweet potato, cabbage, onions, and an array of native tropical fruit. She gave us a beautiful large pumpkin. This pumpkin is the base for my bread in this recipe and taste amazing.
So to make a perfect pumpkin recipe I normally roast my pumpkin covered in the oven. I normally find that the pumpkin taste better and maintains a rich taste in comparison to boiling it. You can sprinkle with your favorite spices, cinnamon, cardamon and coriander. Cover and bake for about one hour. The taste is amazing when roasted vs. boiled.

Tips from Chef Marlene
- If using parchment paper make sure to trim of the edges.
- You can use all brown sugar in place of dates and maple syrup.
- Make sure to preheat oven before placing it in the oven.
- Place at the bottom shelf for about 15 -20 minutes to ensure you get a crust and then at the top middle shelf so it wont burn.
- Please wait until it is totally cool before cutting or this will happen. I was so anxious to try it I did not wait. I t was sooo good. It didn’t matter that it was crumbling due to heat.

Best Ever Roasted Pumpkin Soup ~ Bahamian Style
The breads pictured above are made with maple syrup and dates. Amazing, moist, delicious and nutritious. Almost guilt free.
Ingredients
- 2 cups Flour (1/2 wheat 1/2 white unbleached flour)
- 1 cup cane sugar or 1/2 cup Maple syrup and 1/2 cup Date paste
- 1 cup Pumpkin puree
- 1/2 cup coconut oil
- 1/2 cup coconut milk
- 2 tbsp molasses
- 1 1/2 Tbsp baking powder
- 1 tbsp flax meal
- 1 tsp cinnamon'
- 1/2 tsp ginger or 1 inch fresh piece
- 1/4 tsp coriander
- 1/4 tsp cardamon
- For: 10
- Preparation: 10 min
- Cooking: 45 min
- Ready in: 55 min
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Place the dry ingredients in a medium size bowl.
- Place the wet ingredients in the blender with the roasted pumpkin, if using a fresh one.
- Pour the blended ingredients into the dry ingredients and mix well,
- You can prepare your pan with parchment paper if it is not glass or stainless steel. A loaf pan or a 9 x 9 square works perfectly.
- Pour the batter in and place it in the oven.
- Bake for about 50 minutes or until golden.
