If you’ve ever wondered what pumpkin spice could taste like in French toast, wonder no more. Ingredients
- 1 cup plant-based milk
- 1/4 cup cornstarch
- 2 tbsp flax meal
- 1 teaspoon vanilla extract
- 1 teaspoon coriander
- 1/2 tsp cardamon
- 1/2 teaspoon cinnamon
- 1/2 cup pure pumpkin purée
- 2 teaspoons maple syrup
- 8 slices toasted bread
Instructions
- Mix all the ingredients in a large mixing bowl, except for the bread.
- Set the batter aside to allow it to thicken.
- Heat the skillet, adding about 2 tablespoons of oil in the pan for frying.
- Dip the bread into the batter and gently place it into the heated oil for about 2 minutes on each side, or until golden brown.
- Serve immediately topped with your desired topping.
