Banana Bran Muffins are moist, delicious and easy to make. I loved making them for my children and they enjoyed eating them and sharing them with their friends.
Ingredients Found in Banana Bran Muffins
Bran cereal
Raisins
Unbleached white flour
Whole-wheat flour
Cane Sugar
Baking powder
Coconut milk
Coconut oil
Ground flaxseed
Coriander or cinnamon
Banana
Walnuts

Ingredients
- 2 3/4 cup Bran cereal, crushed
- 1/2 cup Raisins
- 1 cup Unbleached white flour
- 1/2 cup Whole-wheat flour
- 2/3 cup Sugar
- 1 tbsp. Baking powder
- 1 cup Coconut milk
- 2/3 cup oil
- 2 tsp. Ground flaxseed
- 1 tsp. Coriander or cinnamon
- 1/2 cup banana
- 1 cup Water
- 1/2 cup walnuts, opt
Instructions
- Preheat the oven to 350º F. Combine flour, raisins, sugar, baking powder, flax and coriander. Mix well.
- Add plant-based milk, oil, mashed banana, and water together.
- Add the cereal last and mix well.
- Pour this into the dry mix and stir thoroughly until moistened.
- Fill muffin cups 2/3. Bake 20 to 22 minutes.
- Cool for a few minutes, serve warm.
Notes
What is the difference between a bran muffin and a regular muffin?
Bran muffins have more fiber added and less sugar. Bran muffins are more nutritious and healthier than regular muffins.
