.It’s finally time to share my favorite vegan carob muffins recipe. I’m so glad you’re here because it means I can finally share one of my most popular recipes with the rest of the world.

This Gluten-Free Vegan Carob Muffins recipe will quickly become a family favorite. The Carob Muffins are ideal for when you need something sweet in the middle of the day but don’t want to cook anything extra. They’re handy to have on hand whether you’re hosting a catered dinner at a party or simply want to satiate your sweet craving.

Storage

After cooling at ambient temperature, these muffins may be kept in an airtight container at room temperature for two to three days, or in the refrigerator for up to a week. They may also be frozen in an airtight container for up to one month, however appropriate storage is required to ensure the finest quality.

Ingredients

White, unbleached flour

White, unbleached flour is the most common type of flour used in baking. It’s made from wheat, which has been milled to remove the bran and germ (which are high in fiber, vitamins, and minerals). Flour is an important ingredient in muffins because it gives them their structure. Flour also helps keep moisture inside the muffin so that it doesn’t become dry after being baked.

Whole wheat

Is a type of flour made from whole grains. Whole grains are the entire grain seed, with all 3 parts: bran, germ, and endosperm. In contrast to white flour, which has only the endosperm part of the kernel removed, whole wheat flour contains all three parts of the kernel. The flour is higher in fiber than white bread but lower in calories and fat.

Carob powder

Carob powder is made from the seed of the carob tree. It’s often used as an alternative to chocolate since it has a similar taste but does not contain caffeine. Carob powder can be found in health food stores or grocery stores. Carob powder contains dietary fiber, calcium, potassium, and magnesium. Because it lacks cholesterol and sodium, carob may be beneficial for those who need to control their cholesterol levels or blood pressure. A serving of carob contains only 100 calories and no added sugar.

Baking Powder

Baking powder is a mixture of carbonate and an acid used to aerate and leaven baked goods. It is different from baking soda because it contains both an acid and a base, which allows it to create bubbles of gas when exposed to moisture.
This makes it more effective than using just one ingredient at a time, such as salt or lemon juice in this recipe. The reactions that take place when you mix baking powder with water are fast—as soon as the ingredients come together they begin reacting with each other immediately. Baking powder is used in muffins because it combines more quickly than yeast, making these recipes easier to prepare on busy weeknights.

Cinnamon or Coriander

Cinnamon is a spice made from the bark of a tree. The bark’s essential oil is extracted and used in food. It has many health benefits, including:

Vanilla

The entire process of growing, harvesting, and curing vanilla beans into pod form can take two to three years. Once it’s cured, it release its flavor and aroma into any food that uses it.

Coconut milk

Coconut milk is a great substitute for cow’s milk. Carob is high in protein and low in fat. It is a good alternative for those with lactose intolerance or vegans. It also has a high amount of fiber, making it an excellent choice if you’re trying to lose weight or have digestive issues such as irritable bowel syndrome (IBS). Coconut milk can be used in carob muffins baking or cooking just like cow’s milk because it has a similar consistency. You may need to add extra liquid when using coconut milk since it doesn’t contain much water on its own.

How do you use carob in baking?

You can use carob in place of chocolate in most recipes. It has a similar consistency and taste, but it contains no caffeine. It is also a good substitute for chocolate if you have allergies to chocolate or other dairy products, are vegan and looking for an alternative to soy lecithin (a common emulsifier), or simply want to cut back on your sugar intake without sacrificing flavor.

Ingredients

  

  • 1 cup white unbleached flour
  • 1 cup whole wheat
  • ½ cup carob powder
  • 1 cup dates or 1 cup mashed bananas
  • 1 ½ T Baking Powder
  • 1 tsp salt
  • 2 tsp Cinnamon or Coriander
  • 1 tsp Vanilla
  • 1 cup coconut milk
  • 1 cup oil
  • 1 cup water

Instructions

 

  • Measure out the dry ingredients into a large mixing bowl.
  • Measure the liquid ingredients and dates into a blender.
  • Blend the liquid ingredients and the dates or bananas until smooth.
  • Combine these ingredients together and add water if necessary, a little at a time.
  • Spoon into the muffin pans and bake for about 25 minutes or until golden brown.
