Banana Cream Chia Pudding is am amazing fiber filled treat that makes you feel like you cheated on your diet. Bananas happen to be my favorite fruit and cashews are my favorite nut. Together they make me dance.
It is easy to make, delicious and bursting with flavors, and a full balanced meal.
This dish is a part of my raw day. I usually like to encourage at least one raw day weekly. This is a great way to transition into a day of fasting. Why?
- When we eat raw for a day or two before going on a juice fast this will make the fast less of a shock to the system.
- This would fall under the category of a partial fast. This may be easier for most persons who are unable to fast fully on just juices and teas.
Ingredients
Banana
Chia
Vanilla
Maple Syrup
Dates
cashews
Walnuts
Almonds or Pant-based Milk
Is chia actually good for you?
Ingredients
- 1 med banana
- 1 cup plant-based milk
- 1/4 cup Chia Seeds
- 3 tbsp Maple Syrup or dates
- 1 tsp non-alcoholic vanilla
- Pinch of salt
Cashew Cream
- 1/2 cup cashews, soaked overnight
- `1 cup drinking water
- 2 tbsp Maple Syrup or dates
- 1 tsp non-alcoholic vanilla
Instructions
- Blend half the banana and the sweetener of your choice with the milk. Blend until smooth.
- Pour in the mixture into a small mixing bowl along with the chia seeds and mix well to avoid the chia clumping together.
- MAKE CASHEW CREAM
- Place the cashews, water, and sweetener into the blender and blend until smooth.
- Slice the remaining half of the banana and layer some to the bottom of your serving container along with chopped walnuts.
- Pour in some of the chia mixture, and now layer with cashew cream. Alternate until you are done.
- Top with sliced bananas and chopped walnuts.
- Refrigerate
- NB. To avoid the banana turning brown you can coat with lemon juice.
Notes
How to Store Chia?
You can refrigerate the chia pudding in a balls jar, or covered container for up to a few days before it goes bad.
