Ingredients
- 9 lasagna noodles Lasagna Pasta (unbroken)
- 2 cups spinach leaves
- 1 14-16 oz tofu (water packed)
- 1 cup onions, chopped
- 1/2 cup celery, chopped
- 1/2 cup Bell Pepper
- 1 cup tomatoes, chopped
- 1 tsp garlic powder
- 2 cloves Garlic, chopped
- salt to taste
- 1 tsp Italian Seasoning
- 1 tsp plant based bullion
Sauce
- 1 1/2 cups cashews, soaked overnight
- 2 cups plant-based milk
- 3 cups water
- 2-3 cloves Garlic, chopped
- 1 tsp garlic powder
- 1 tsp thyme leaves
- 1 1/2 tbsp cornstarch or arrowroot powder
- salt and pepper to taste
Instructions
Prepare the Tofu
- Add chopped herbs, onions, tomato, bell peppers, celery, and garlic, to a skillet with 2 tablespoons of water for sauteing. Allow them to cook until the onion is clear in color.
- Take the tofu out of the pack, drain, and rinse. Using a fork or your hands mash the tofu and add to the skillet with the herbs. Season and allow it to cook for two minutes. Turn off the stove with the tofu and set it aside.
Sauce Recip
- garlic, cornstarch, water, salt, milk, and thyme. Blend the ingredients until they are smooth and creamy.
- Pour the contents from the blender into a medium size pot or large skillet and cook on medium heat until the sauce thickens.
- Turn off the heat and set the sauce aside.
Let us Assemble the Lasagna
- The first thing you do is to pour about 1/2 cup of sauce into the bottom of the pan. 9 x 13 inches. Next, take 3 uncooked lasagna noodles and place them at the bottom of the pan.
- Next layer the spinach on top of the tofu.
- Take the scrambled tofu filling and separate it into 3 parts in the skillet to ensure you have sufficient for the three layers.
- Pour about a cup of the sauce on top of the lasagna noodles. Take the scrambled tofu and sprinkle it on top of this.
- Repeat this process until you top it off with sauce to complete the process.
- Cover the lasagna with wax and foil paper.
- Bake the lasagna for about 45 minutes in the oven at 350 °F.
- When you remove the lasagna from the oven make sure to uncover it and set it aside for about 30 minutes before cutting it This allows the lasagna to set up and makes for easy slicing.
