    This Vegan Meatloaf recipe is loved by most if not all who frequent my Vegan Deli. Meat eaters enjoy this delicious veggie meatloaf!

    My family enjoys this Vegan Meatloaf at parties, dinners, and yes even at holiday times. The main ingredients in this Vegan Meatloaf are, any nut meal of your choice, breadcrumbs, oats, textured vegetable protein or boiled lentils, onions, and spices. It is simply amazing how when these ingredients come together, they resemble that of a meatloaf.

    Benefits of Vegan Meatloaf

    • Texture vegetable protein or TVP is a high-fiber food that aids in lowering cholesterol, and high blood pressure keeps blood sugar under control and aids in weight management.
    • TVP is a high-protein meat substitute made from soy flour. It has no fat or cholesterol, and so it will aid in keeping our hearts healthy.
    • TVP is also available in stores and online in different flavors and sizes. It is available in granules, chunks, and cutlets.

    What is Textured Vegetable Protein

    Textured Vegetable Protein is a very nutritious soy product. It’s a complete protein with no fat, therefore this makes it an excellent meat alternative. It can be used for meatloaf, lasagna, tacos, burger recipes, and chili.

    Textured vegetable protein, TVP

    1. Textured vegetable protein, also known as TVP, is a meat substitute featured in many vegetarian products. It might have also been on supermarket or natural food store shelves.
    2. It’s an excellent addition to sauces, plant-based chili blends, and vegetarian burgers because of its distinctive texture and mild flavor. Additionally, it is utilized to give meat-based recipes more volume and protein.
    3. Contrary to what its name might suggest, textured vegetable protein is usually produced from soybeans rather than vegetables. It is created while soybean oil is being made. A high-protein paste is left over after the soybeans’ oil has been removed. To create various shapes, such as nuggets, strips, or flakes, this paste is forced through a hot nozzle. After shaping, the paste is then dried.
    4. TVP can be manufactured from a variety of substances, besides just soy, including wheat and oats.
    5. You must rehydrate TVP with hot water or broth before using it. Once that’s done, it’s simple to incorporate as a meatless substitute for ground meat in dishes like meatballs, burger patties, or chili.
    6. TVP is high in protein, fiber, and a number of critical vitamins and minerals but low in calories.

    Concerns about Soy

    Some are concerned about soy intake. Eating soy is not bad, and is actually healthy when consumed. A little soy has been proven to help with the fight against cancer. If your cancer is estrogen driven, then the advice would be to avoid soy.

    Lentils Instead

    If you wish to try this recipe with lentils instead, it makes a great substitute.

    Vegan Meatloaf

    Ingredients

      

    • 2 c. TVP beef granules
    • 4 c. water
    • ½ c. oil
    • 1 c. oats
    • 1 lemon juiced
    • 4 tbsp. whole wheat flour
    • ½ cup pecan meal or any nut meal
    • 1 tbsp. garlic powder
    • 1 tbsp onion powder
    • 3 cloves of garlic crushed
    • 1 ½ cup Breadcrumbs
    • ½ cup finely chopped onion
    • ½ c. finely chopped sweet pepper
    • Salt and pepper to taste

    Instructions

     

    • Place TVP in a pot with the water and allow it to come to a rapid boil. Allow the TVP to rehydrate before adding anything else.
    • Add oil, onions, bell peppers, oats, and garlic, to the pot. Add all other ingredients once the TVP has been re-hydrated. Mix well and roll meatballs or loaf.
    • Bake 40 to 45 minutes at 350 degrees. This makes about 70 meatballs.
    • If you wish to make patties, use the cover from a Balls jar as your mold.
    • Spoon the mix into the cover while resting on the pre-sprayed baking sheet.
    • Patties keep shape very well, perfect for making burgers for sandwiches. This is my children’s favorite patty!

    • If you wish a loaf, spread onto a baking sheet about 1 inch in thickness and pour barbecue sauce on top.

    Notes

    TIPS FOR MAKING VEGAN MEATLOAF

     

    1. If preferred, whole wheat or gluten-free breadcrumbs can be used as a substitute. For my restaurant, I use whole wheat bread and even Spelt bread. I usually make my own breadcrumbs from a trusted dairy-free brand. It is very important to check the label on breadcrumbs because most if not all have dairy.

     

    2. When rehydrating the TVP, always remember it is one cup of TVP to two cups of water. Allow the TVP to rehydrate properly before adding the oatmeal. Once the oats have been in at least 3-5 minutes then you can add the other ingredients.

     

    Bottom Line

    B vitamins, Vitamin A, and Vitamin C, which are necessary minerals for a number of biological functions, can be found in vegan meatloaf. The meal includes legumes and vegetables that are high in dietary fiber, which aids in lubricating the digestive system and prevents rising blood sugar levels. Garlic and other meatloaf spices are antioxidants that support increased immunity in the body.
