- 4 medium sweet potatoes (purple skin, about 4 cups mashed)
- 1 tablespoon ground flaxseed + 3 tablespoons water (vegan egg)
- 1 cup unbleached all-purpose flour (add more if you want it firmer)
- ½ to 1 cup organic cane sugar or coconut sugar (adjust to taste)
- 1 cup freshly grated coconut (or more if desired)
- ½ teaspoon ground nutmeg
- 1 tsp cinnamon
- 2 tablespoons vanilla extract
- ½ cup full-fat coconut milk
- ¼ cup vegan butter (or melted coconut oil)
- ½ teaspoon sea salt
Instructions
- 1. Preheat your oven to 350°F (175°C). Lightly grease or line a baking dish.
- Mix flaxseed and water. Let it sit for 10 minutes to gel.
- 3. Cook and mash sweet potatoes until smooth.
