- 2 tbsp. Lemon juice
- 1 tsp. Vanilla
- 1 tbsp. cornstarch
- 1/2 cup brown sugar
- 1/4 cup oil
- 1 Tofu Mori-Nu, Silken Style Firm or Extra Firm
- A pinch of salt
- 1 cup crushed pineapple
- 1 tsp lemon rind
- 1/4 cup of cashews or almonds
Pour into a 9inch Graham Cracker Crust
Instructions

Place all ingredients in a blender and blend on high until they are creamy and smooth.

Pour into a pre-made Graham cracker crust. {9 inch}

Bake for 45 minutes at 350°F.

Allow the pie to cool completely before adding your choice topping on top (optional).

Keep refrigerated until ready to serve, preferably overnight! Cool and serve.
