I have been making tofu cheesecake vegan for about 23 years. I remember making it for my children and how much they enjoyed it. This would give me the confidence to make these recipes for our guests.

Ingredients
- 1 Block Silken Style Tofu, Firm or Extra Firm
- 1/4 cup Date Paste
- 1/4 cup Maple syrup
- ¾ cup Crushed Pineapple
- ¼ cup Almonds or Cashews
- ¼ cup oil
- 2 T Cornstarch
- 1 tsp Lemon rind
- ½ tsp salt
- Frozen Fruit Topping
- 1 cup Apple Juice Concentrate
- 1 1/2 tbsp. Cornstarch
- 2 cups Fresh or frozen fruits
- 1 cups water
Instructions
- 1. Open tofu and drain the water. Put the tofu in the blender.
- 2. Measure out the other ingredients and place all in the blender.
- 3. Blend all ingredients until it is all smooth.
- 4. Pour the pie into the crust and bake for about 45 minutes to one hour at 350.
- Mix cornstarch and concentrate.
- Heat till thick, stirring constantly.
- Add the frozen fruit
- Pour over waffle, pie, etc.
Notes
CRUST
1 1/2 cups graham cracker crumbs (12 crackers)
1/3 cup maple syrup (opt)
6 tbsp plant based butter
Directions:
- Take the crackers (12) and put them in the food processor. Pulse until they are crumbs.
Note: If you have no food processor you can use a blender or simply add them to a gallon plastic bag and use a rolling pin or a pan to crush the crackers.
2. Add the melted butter to the crackers and mix well.
3. Take the mixture and add to you 9 or 10 inch ungreased springform pie dish. I used a regular glass pie dish. Do you press to heavy.
4. Bake for 10 minutes at 350 degrees for a bakes pie and about 25 minutes for a no bake pie.
