Ingredients
- 1 cup Crushed pineapple
- 2 cups coconut milk or plant-based milk
- 4-6 tbsps Chia Seeds
- 1/2 cup Shredded Coconut
- 1/4 cup chopped nuts
- 1 tsp vanilla extract, opt
- 3-4 whole pitted dates, blended (blend dates or chop)
- For: 4
- Preparation: 5 min
- Cooking: 30 min
- Ready in: 35 min
Instructions
- Add the dates to the blender and blend with the milk of your choice.
- Pour the milk and date blend into a medium size bowl. Add the dates, coconut, vanilla, and chia, and stir.
- Place the mixture in the refrigerator to chill and top with nuts or toasted coconut. Make sure that the Chia has been soaking at least 15 minutes. You can leave it overnight in the fridge.
- Serve with fresh fruit for a complete breakfast, or serve as a dessert.

CHIA IS HIGH IN FIBER AND PROTEIN
Chia is high in fiber and protein making it a perfect food for breakfast. I have chosen for a long time now to have a raw breakfast as a part of my weight management program. I enjoy Chia puddings of all kinds, however, this one here serves as my favorite.
Chia seeds have 10.5 grams of fiber per 4 tablespoons full and 12 grams of protein. I find it filling and very satisfying.
