Lentil Stew

Ingredients

  

  • 2 cup Lentil dry
  • 8 cup Water
  • 3 cloves Garlic minced
  • 2 Tbsp Thyme
  • 1 Bay leaf
  • 1 cup TVP soy beef like granules
  • 1 Tbsp Italian seasoning
  • 1 Tbsp Honey
  • 1 cup Coconut milk
  • 2 cup Tomato sauce
  • 1 cup Pumpkin diced
  • 1 cup Sweet pepper
  • 1 cup Carrots chopped
  • 1 cup Celery chopped
  • 1 cup Onion chopped
  • 2 med Sweet Potatoes diced
  • 1/4 tsp Cayenne pepper
  • Braggs Liquid Amino
  • 1 Tbsp Chicken Style Seasoning

Instructions

 

  • Boil lentils until half done. Add all other ingredients and add salt to taste, once the stew is finished.
  • Thicken with 1/2 cup water and 1 Tbsp of corn starch. Mix well before adding.
