Ingredients
- 3/4 cups Soy margarine or oil
- 1 1/2 cups Sugar
- 3/4 cup Molasses
- 1 1/2 cups Whole wheat flour
- 1 1/2 cups unbleached flour

- 1 cup Coconut Milk
- 1 cup Raisin
- 1/2 cup Walnut
- 2 teaspoon Rumford baking Powder
Instructions

Place oven rack in center position and preheat oven to 350ºF.

Place parchment paper on a baking pan or spray the pan.

Cream margarine and sugar in a large mixing bowl.

Combine all of the remaining ingredients and combine well.

Pour the cake into the pan and put it in the preheated oven.

Bake for 45 minutes or until golden-brown.

• 1 cup of sugar
• 1/2 cup of oil
• 1/2 cup of milk (you can also use soy milk)
• 1 cup of water (you can also use juice)
• 1 cup of flour (any type or combination of flours will work)
• 1 cup of soy flour
(This is a great way to add some extra protein and fiber to your diet) If you are gluten-free, you can use brown rice flour instead. The choice is yours! Just remember that the mixture will be dryer for brown rice flour than for regular wheat flour. This shouldn’t be an issue because we’re adding more wet ingredients later, but if it bothers you too much then go ahead and try using whole wheat pastry flour instead! Or even half whole wheat pastry and half white bread.
