Ingredients
- 2 1/2 Cups Flour (half/half)
- 5 T. sugar
- 1 tsp. salt
- 1/2 cup warm coconut milk
- 1/2 cup warm water
- 1/4 cup oil
- 1 T. yeast
- Topping:
- 1/4 c. olive oil
- 2 garlic cloves, finely minced
- 1 1/2 tsp. dried Rosemary
- 1 T. fresh Thyme
Instructions
- Place warm water, coconut milk and 1/4 cup of oil in a bowl, and
- sprinkle in sugar and yeast, stir and set aside for 5 mins.
- Once it is activated, add in flour and salt and mix well to a soft dough. Knead for
- 10 minutes.
- this somewhere warm till the dough is doubled in size.
- Put the oil, chopped thyme, chopped rosemary and minced garlic in a pan, warm.
- Once it is doubled in size, punch the air dough and knead it well.
- Transfer the dough to the baking sheet then press it down into the pan.
- Use your fingers to dimple the dough then drizzle the top with the remaining garlic/herb olive oil mixture. Let the dough rise for 20 minutes until it puffs slightly. Bake until golden brown, preheat the oven to 375° 15 to 20 minutes.
