Corn Fritters are a staple delicacy in Bahamian culture. A simple mixture of flour, corn, and herbs, corn fritters are an easy snack or appetizer that can quickly be whipped up.

TYPES OF FRITTERS
There are many types of fritters, banana, plantain, cod, conch, mushroom, and the list continues. However, in today’s blog I would like to introduce you to corn fritters, an alternative to the native conch fritters, enjoyed here in the Bahamas.

Traditional Dish or Corn Fritters Usually with Conch
Conch, a locally popular mollusk, is used in this classic Bahamian recipe. Any seafood can be used in place of a conch. See how amazing it tastes when you make this batter with different sea foods or vegan meat substitutes. In today’s recipe, corn will be used.
These fritters go well with your favorite summer punch or tropical beverage as an appetizer, finger food, or very tasty hors d’oeuvre! Like nothing else, this famous appetizer screams “vacation”, And once you give them a try, there’s no turning back. Together they’re A Delicious Bite of Sweet and Savory (put this in your header for points,)! These bite-sized corn pillows are the ideal appetizer or quick snack because they are crunchy and puffy. They are wonderful on their own or dipped in your preferred sauce. Though they aren’t too high on the health scale, due to deep frying, who doesn’t enjoy a good friend, well, anything?!


CORN FRITTERS
Ingredients
- 2 ½ cups All Purpose Flour
- 1 ½ T salt
- Dash of Cayenne Pepper
- 1 T thyme
- ½ cup Bell Peppers
- ½ cup Celery
- ½ cup Onion
- ½ tsp garlic powder
- 1 tsp Baking Powder
- 1 Tin Corn with liquid
- 1 T Ketchup
- 1 cup water to start
Instructions

In a mixing bowl, add all ingredients. ADD the water from the corn also.

Next measure out 1 1/4 cup of water.

Add the water in 1/2 cups. Mix well.

When you are through, your batter should be able to drop of the spoon easily.

Once the oil is ready, drop spoonsful into the hot fat.

Allow the fritters to turn golden brown before taking them out of the oil.

Drain on paper towel onto a plate.

Serve.

Frying
When it comes to deep-frying food at home, you have a few options. You can use a deep fryer or a large heavy-bottomed pot on the stovetop with a thermometer. Always remember to exercise caution when frying food. Keep the oil at a constant temperature and close by at all times.
HOW TO MAKE BATTER FOR CORN FRITTERS.
In a medium mixing bowl, combine the flour, baking powder, salt, and sugar. Pour water into the flour mixture and stir to combine. Combine the drained corn kernels in a mixing bowl. Allow the batter to rest for 30 minutes.
FRY.
In a large heavy pot or deep fryer, heat the oil. Raise the temperature of the oil to 365°F. Using a spoon, drop spoonsful of batter into the oil. (You should be able to get approximately 12 spoonfuls) Fry until golden, turning as needed to brown all sides.
DRAIN.
Allow the fritters to drain on a plate lined with paper towels.
Air Frying
What’s an air fryer? If you plan to use an air fryer, freeze the patties first to solidify them before placing them in the air fryer. Put them in there for about 30 minutes. After that, cook for 10 minutes in the air fryer at 400 degrees Fahrenheit, then flip and cook for another 5 minutes.

Can I use canned corn?
In this corn fritter recipe, canned corn is used, but fresh or frozen corn also works. If you’re using canned corn, make sure to drain it first. Also, if using frozen corn, it must be thawed before use.
Can you freeze corn fritters?
Yes, you can freeze corn fritters after they’ve been cooked. Keep them in an airtight container or a zip-top freezer bag. Thaw on the counter for 1 hour before using.
Can corn fritters be reheated?
Corn fritters can be reheated in the oven, toaster oven, air fryer, or frying pan. In a pinch, corn fritters can be warmed in the microwave, but they will not be as crispy.
What to do with Leftover Batter?
You can freeze the batter for a few months. It is even sold in the local grocery stores.
