Corn Fritters are a staple delicacy in Bahamian culture. A simple mixture of flour, corn, and herbs, corn fritters are an easy snack or appetizer that can quickly be whipped up.

There’s something special about the sound of fritters sizzling in a hot skillet—it takes me back to warm afternoons in The Bahamas, where food is more than nourishment; it’s a memory, a tradition, and a celebration. One of the most beloved street foods in Bahamian cuisine is the famous conch fritter, a deep-fried bite of seasoned goodness. Today, I’m excited to share a plant-based twist on this island favorite: corn fritters, made in the same savory, spiced style that locals love.
TYPES OF FRITTERS
There are many types of fritters, banana, plantain, cod, conch, mushroom, and the list continues. However, in today’s blog I would like to introduce you to corn fritters, an alternative to the native conch fritters, enjoyed here in the Bahamas.

Traditional Dish or Corn Fritters Usually with Conch
Conch, a locally popular mollusk, is used in this classic Bahamian recipe. Any seafood can be used in place of a conch. See how amazing it tastes when you make this batter with different sea foods or vegan meat substitutes. In today’s recipe, corn will be used.
These fritters go well with your favorite summer punch or tropical beverage as an appetizer. They are the perfect finger food, or tasty hors d’oeuvre! Like nothing else, this famous appetizer screams “vacation”, And once you give them a try, there’s no turning back. Together they’re A Delicious Bite of Sweet and Savory (put this in your header for points,)! These bite-sized corn pillows are the ideal appetizer or quick snack because they are crunchy and puffy. They are wonderful on their own or dipped in your preferred sauce. Though they aren’t too high on the health scale, who doesn’t enjoy some good fried, well, anything?!

Ingredients
- 2 1/2 cups all purpose flour
- 2 tsp. baking powder, Rumford
- 1 tin corn
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1/2 cup chopped celery stalk
- 1/2 tsp. minced garlic
- 1 tsp. thyme
- 1 1/2 tbsp. garlic powder
- 1 tbsp ketchup
- salt and pepper to taste
- 1 tbsp flaxseeds
- 3 tbsp water
- The Sauce
- 1/2 cup Plant-based Mayo
- 3 tbsp. ketchup
Instructions
- Prepare flax egg
- In a small bowl, mix ground flaxseed with water. Let sit 5–10 minutes until it thickens.
- Mix dry ingredients
- In a large bowl, whisk together flour, salt, and pepper.
- Add wet ingredients
- Stir in the flax egg and water to form a thick batter.
- Add veggies & corn
- Fold in corn, onion, bell pepper, celery, and garlic. Mix until evenly combined.
- Heat oil
- In a large skillet or deep fryer, heat oil to about 365°F (or until a drop of batter sizzles on contact).
- Fry the fritters
- Drop rounded tablespoons of the mixture into the hot oil. Flatten slightly and fry until golden brown on both sides, about 2–3 minutes per side.
- Drain & Serve
- Remove fritters and place on paper towels to drain. Serve warm with a spicy vegan dip or pineapple sauce.
