Vegan chickpea loaf recipe
The chickpea loaf gluten-free recipe is a vegan alternative that mimics the texture and flavor of traditional meatloaf but is considerably simpler to prepare.
Expect this to be something other than another crumbly vegan bread. It’s a heavenly, tasty, meaty, and highly delicious dish paired with mashed potatoes and green beans.
It’s meaty enough to be the family’s main entrée on a chilly night (hello, vegan Family meal!) but simple enough to prepare that it won’t take too much time on a weekday.
This vegan chickpea meatloaf is a delicious and nutritious alternative to traditional meatloaf. Prepare the veggies by heating them in water or olive oil over medium heat for a few minutes or until the onion becomes transparent.
The chickpeas should be drained and washed before being mashed in a large dish. A potato masher will do the job well; you can also use a food processor.
As soon as the veggies are tender, throw in the rest of the ingredients with cooked veggies. Do your best to combine the ingredients thoroughly. Using a spatula, uniformly distribute the chickpea mixture in a loaf pan, cover it with foil, and bake it for 30 minutes.
After 15 minutes, take off the foil and add the topping. As soon as it’s done baking, please remove it from the oven and allow it cool for a few minutes before slicing.

Chickpea
You can bake this loaf with canned chickpeas, but you can easily make them yourself. For this bread, you will need about 3.5 cups of cooked chickpeas.
Bread crumbs
You can use ordinary breadcrumbs or panko breadcrumbs; whichever you choose, make sure they are vegan.
Oats
Oats help keep the bread from falling apart while it’s baking. Adding flour is not recommended if you don’t want your meatloaf to look like a loaf of bread.
Walnuts
Nuts can be used, like walnuts, pecans, and almonds. However, if you prefer, you can substitute extra oats for the nuts in the recipe.
Onions
Your chickpea loaf would benefit from the addition of chopped onion. Because of this, the bread will have a rougher appearance and texture.
Coconut milk
Coconut milk is a perfect alternative to dairy products for bakers whose diets prohibit them, and no adjustments need to be made when using it. Whenever whole milk is called for in a recipe, you may use 1 cup of coconut milk instead.
Thyme
Some say that the flavor of thyme is a cross between mint and lemon. It tastes of earth, flowers, sweetness, and pepper. Use thyme to season the chickpea loaf.
Sage
Sage is a widely-grown shrub, and for a good reason: its aroma and flavor are reminiscent of other herbal remedies and the ground. So you can add a little bit of sage to the loaf. The stuffing and other savory dishes served at Thanksgiving and Christmas commonly use this ingredient.
Braggs liquid amino
Liquid Amino is used instead of soy sauce in Vegan diets. Gluten-free Tamari may be substituted for ordinary soy sauce if you are not following a vegan diet. It is also an incredible alternative to bbq sauce or barbecue sauce.
Cayenne
While other dried chilies have a similar heat level, cayenne pepper has a unique flavor and aroma. You can also use smoked paprika as a substitute. The flavor is mostly peppery with a hint of fruit. Make sure the meatloaf has some flavor by adding a lot of this to the mix.

- 1 1/2 cups chickpea
- 1 1/2 cups oatmeal
- 1 1/2 cups breadcrumbs
- 1/2 cup walnut, or any nutmeal
- 1 cup onions (diced)
- 1/2 cup celery (diced)
- 1 cup coconut milk
- 1/2 cup oil
- 1/2 tsp thyme leaves
- 1/2 tsp sage
- 2 tbsp Soy sauce
- Dash of Cayenne
- salt to taste

Preheat oven to 350 degrees.

Finely chop veggies for a meatloaf, not too large.

Add the onions, garlic, and celery to a large frying pan on the stovetop with 1 tbsp of water or oil. Cook over medium heat for 6-7 minutes then stir in the salt, sage, thyme and onion (and cayenne if using) and cook for a couple more minutes.

In a food processor or blender take the garbanzos, bread and nuts and blend into a fine flour.

Pour the contents into the frying pan and stir in the coconut milk, oil and add water as needed. Mix the contents until it becomes a uniform mixture.

Season to taste.

Pour mixture into a standard size loaf pan (8.5 x 4 .5 x 2.5 inches)

Bake for 40-45 minutes or until golden brown.

Allow the loaf to rest before slicing, or it may be crumbly.
How to store this vegan meatloaf?
Bread can be put in the fridge for 24 hours before it is baked. Keeping baked bread in the fridge for six days is just OK. A complete loaf, or even just slices, may be frozen and stored for up to three months in a freezer bag or container. Then, use the oven or microwave to reheat.
Vegan meatloaf may be frozen in individual portions with waxed paper between them. Because of this, you may remove from the freezer as many portions as you need at any given moment.
This is a fantastic recipe for batch cooking since it can be consumed for several days. Put the loaf in an airtight container after it has cooled fully, and store it in the fridge for up to 6 days. Then, anytime you want, reheat it!
