- 1 large cassava, boiled
- salt and pepper to taste
- 1/2 cup oat flour
- 1/2 cup coconut oil
Instructions
- Wash and peel the yucca with the vegetable peeler.
- Cut the cassava into even round pieces and then in four.
- Boil the cassava for about 15 - 20 minutes in salted water to your taste. Drain and pat dry.
- Sprinkle the cassava with salt and then sprinkle the oat flour onto the cassava.
- Preheat the skillet with the oil.
- Add the cassava to the hot skillet. Allow them to brown on each side. This should take about 5-7 minutes.
- Once you take the fries out of the oil be certain to line a plate with paper napkins and drain the fries on the napkin.
- You can also bake the cassava fries to use less fat. Bake them at 400 °F for about 30 minutes, Make sure to turn them halfway through the baking time,
