Bread Pudding inspired by Idamae Hanna

Ingredients

  

  • 7 cups Whole wheat bread crumbs
  • 1/2 cup Raisin
  • 1/2 cup Coconut
  • 1/2 cup Crushed pineapple
  • 1 tbsp. Molasses
  • 1/2 tsp. Salt
  • 1 tsp. Vanilla
  • 1-2 Bananas
  • 3/4 cup Honey
  • 1 tsp. Coriander
  • 1 1/2 cup Water
  • 1/2 cup Walnuts chopped
  • 1/2 cup Whole-wheat flour
  • 1 1/2 cup Coconut milk

Instructions

 

  • Place shredded bread crumbs, raisins, coconut and pineapple in a large mixing bowl. In a blender, place banana, honey, molasses, water, vanilla and coconut milk. Blend smooth. Pour contents over breadcrumbs and
  • allow to soak for 8-10 minutes. Mix well. Place in pre-sprayed baking pan and bake at 350 for 45 minutes or
  • until done.
