- 10 apples peeled and sliced
- 2 cups pineapple juice
- 1 1/2 tbsps cornstarch
- 1/2 cup sugar or maple syrup
- 1 tsp Cinnamon or coriander
Topping or crust
- 2 cups oat flour
- 1 cup grated coconut
- 1 cup Oil or Plant Based Margarine
- 1 cup white unbleached flour
- 1 cup sugar or maple syrup
- 1/2 cup walnuts, pecan, or cashew (opt.)
- 1 tsp Cinnamon or coriander
- 1/2 tsp salt
- For: 8
- Preparation: 30 min
- Cooking: 1 h
- Ready in: 1 h 30 min
Instructions
- Peel the apples and slice them.
- Add the sliced apples to a pot or skillet with 1 1/2 cups of pineapple juice, sugar, and coriander.
- Combine the cornstarch with some pineapple juice and once the apples have been cooked for about 10-15 minutes add the cornstarch slurry to the pot. Stir immediately and turn off the stove once the apples have gotten thick. Set the apples aside until the crust is ready.
- Measure the dry ingredients and butter into a medium size bowl.
- Rub the fat into the dry ingredients and separate this mixture into two. Take one half and press it into the casserole dish 9 x 13 inches.
- Take the cooked apples and pour them onto the crust and top with the remaining portion of the crust. Sprinkle it on top, do not press it down.
- Bake at 350 degrees for about 45 minutes. Serve
